Vegan White Chocolate Macadamia Nut Cookies

These are the BEST cookies ever! I was so hesitant to post the recipe simply because the one ingredient that makes these cookies so magnificent are also the hardest ingredient to find, vegan white chocolate chips.  I found these vegan white chocolate chips at a small local organic food shop, in the bulk section, with no brand labelled on them.  The only advice I can give is if you find vegan white chocolate chips you buy them and you buy them all and if finding vegan white chocolate chips is no problem for you then lucky you. Anyways besides finding the white chocolate chips the rest of the ingredients are super easy to find and inexpensive and to make the cookies is actually pretty quick and simple.  I have made these cookies so many times that I have a couple different variations for ingredients you can use and rest assured I have tried them all and every time these cookies turned out great.

Makes 12 cookies

Ingredients:

  • 1 cup flour, can be any kind organic white, whole wheat, or a gluten free blend
  • 1/2 cup organic cane sugar or coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp ground vanilla bean powder
  • 1/4 tsp salt
  • 1/2 cup vegan butter or melted coconut oil
  • 1/4 cup almond mylk
  • 1 tbs ground golden flaxseeds
  • 1/2 cup chopped macadamia nuts
  • 1/2 cup white chocolate chips

What to do:

  1. Preheat oven to 350 degrees fahrenheit and get a baking pan ready and layer it with parchment paper
  2. Combine the milk, ground flaxseeds, butter or coconut oil in a bowl and mix either with a mixing spoon or a handheld blender if you chose to use butter
  3. In a separate bowl, combine the vanilla, flour, sugar, baking powder and salt and mix together with a whisk
  4. Add the wet ingredients to the dry ingredients and mix well preferably with a hand held blender especially if you used butter
  5. Add the white chocolate chips and chopped macadamia nuts to the bowl and mix well again
  6. Roll the mixture with your hands into 12 little balls and place them evenly spaced a part on the baking pan
  7. Pat the balls down with the palm of your hands to flatten them a bit
  8. Place them in the oven for 12 minutes or until the edges are nice and golden brown
