Easy No Bake Date Squares

Okay so I am so proud of this recipe because I have mastered the ultimate date square. These date squares are moist, chewy, buttery and simply delicious! The best part, aside from their exceptional taste, is they are completely refined sugar free, butter free, dairy free and egg free! You would be surprised with the amount of sugar and butter that goes into traditional date squares, which is completely unnecessary! Dates are naturally so sweet and why try and cover up their already chewy and delectable taste? They are called date squares after all.

Easy No Bake Date Square Recipe:

Makes approx. 12 squares

For the crust/crumble:

  • 1.5 cups walnuts (or almonds)
  • 1.5 cups oats
  • ½ tsp salt
  • 10 medjool dates
  • ¼ cup coconut oil
  • dash of cinnamon (optional)

For the filling:

  • 25 medjool dates
  • ½ cup water
  • Dash of vanilla (be sure to use alcohol free vanilla, I use raw ground vanilla bean powder)
  • Dash of salt

What to do:

  1. In a food processor or blender place the walnuts (or almonds), salt, and oats and blend/process until you get a crumbled like texture.
  2. Roughly chop up the dates and put in with the rest of the mixture and blend/process until they’re all mixed in, still should be a crumble like texture not powdered
  3. Place the crumble in a bowl, melt the coconut oil, and stir into the mixture to form a sticky crumble
  4. Put a ¼ of the crumble mixture into the bottom of a square pan and press down firmly with your hands
  5. Blend all the filling ingredients together until it forms a smooth consistency and pour mixture over the crust in the square pan
  6. Sprinkle the rest of the ¾ crumble mixture on top of the date filling and then lightly press down with fingers
  7. Refrigerate for one hour, but overnight is best

Tips:

*Coconut oil melts at a very low temperature, so to melt it place it in a bowl over a pot on a medium heat until melted, or take the lazy way out and microwave it for 5 seconds

*Don’t omit chopping the dates up roughly, it helps a lot when blending and processing
