*vanilla bean powder is completely optional. I have made this smoothie plenty of times without it and its still a delicious creamy mint smoothie. The vanilla powder makes it taste a bit more dessert-like and really brings together the coconut and mint flavours. I recommend only using vanilla bean powder not vanilla extract because the extract is usually in some type of base i.e. alcohol or glycerin and neither of those taste good in a raw smoothie.
**ice really helps to create the perfect texture in this smoothie so its important not to skip this ingredient. Green smoothies also taste better when they’re cold.
